Recipes From Our Garden

After reassuring the PR kids that the vegetable is OKRA, and not called OPRAH, I was challenged to come up with a healthy recipe for preparing this strange-looking vegetable. The usual suspects being fried okra (I am a Texan, after all) and gumbo, I found a terrific recipe for roasting fresh okra.

Ingredients
18 fresh okra pods (whole or sliced longwise)
1 tbsp olive oil
2 tsp kosher salt (or to taste)
2 tsp black pepper (or to taste)

Directions
1. Preheat over to 425 F.
2. Arrange the okra in one layer on a foil-lined cookie sheet. Drizzle with olive oil, and sprinkle with salt and pepper.
3. Bake in the preheated over for 10 to 15 minutes, until the okra is nicely browned.
